An actual nutriture population is analysed in research, the domestic market of food stuffs is studied with high maintenance biologically active matters which positively influence on the increase of firmness of organism of man to the diseases at the psikhoemociynikh loadings and unfavorable action of environment, and taking into account insufficiency at the food market of Ukraine of products of health orientationre commendations are developed in relation to the feed of different layers of population of Ukraine, investigational methodological aspects of constructing of food of the functional setting stuffs. Scientifically grounded and the newest technologies of culinary and pastry products of the functional setting are developed on the basis of model functional compositions from raw material of phytogenous and dietary additions, the estimation of their quality is carried out after the developed methods. With the purpose of optimization of feed of population the newest technologies of culinary products are developed and drinks, which declarative patents are got on, tts and technological instructions are developed and ratified.
