Research methods - The research uses analytical, statistical, comparative, experimental (research was conducted according to a set of traditional and modern physicochemical, organoleptic and mathematical (experimental data processing)) research methods. In the course of research work, the analysis and comparison of canned meat on compliance with the requirements of national standards of Ukraine was carried out. The compliance of safety and quality indicators of canned meat with the requirements of current regulations of Ukraine has been established. The conduct of organoleptic tests has been systematized, generalized and specified, and relevant recommendations have been developed. Developed "Procedure for acceptance, laying, storage and shipment of canned meat" (approved the Order of the State Reserve Agency of Ukraine № 106 from 17.05.2021) Field of use: enterprises, organizations and institutions of the State Material Reserve System of Ukraine.
