 The purpose of the work is to outline the features of sustainable production and consumption of food products in the context of the green economy and prospects for the post-war reconstruction of Ukraine. The object of the research is the food and consumer sector. The subject of the study is sustainability in the Ukrainian food and consumer sector. Research methods - content analysis was used to conduct relevant research. In the future, such an analysis will make it possible to build a multifactorial model with the identification of factors affecting the sustainable production of food products and, in general, the sustainability of the entire economy of Ukraine. To optimize and classify the obtained data, three conditional criteria were used: ecological and economic; ecological and biological; ecological and social. Empirical method, methods of observation, induction and deduction were used to confirm the formalized hypothesis. The peculiarities of the formation of sustainable gastronomy in Ukraine are analyzed in the context of the principles of the green economy. green consumption. The main influencing factors have been determined. Recommendations for studying the structure of the interaction between the green economy and the post-humanist approach in studies of the sustainability of production and consumption using qualitative and quantitative approaches, control of the level of acquired knowledge and skills in the subject area have been formed. The main results of the research were implemented in the educational process of Simon Kuznets Kharkiv National University of Economics in the training course: "Safety of life and labor protection" and adopted for the implementation of FOP Kateryna BADYORNA.
