Research objective: to search for new deposits of bentonites which satisfy enological requirements and to develop corresponding technical documents. Fining and stabilizing properties of bentonites and mineral sorbents from different deposits of Ukraine being mined or not have been investigated. Modes of employing bentonites from Ukrainian commercial deposits have been substantiated and recommendations have been provided as to the replacement of the formerly used bentonite Askangel (Georgia) with local Ukrainian bentonites from the Gorbsk deposit. It has been established that it is more expedient to perform bentonite fining during the production of white table wines at the stage of must or young wine material. Technological instructions have been developed as to the use of bentonites with a view of fining and stabilization of must and wine materials by means of bentonites with a weak or good defree of swelling. Technological specifications № 05792908 "Bentonites of the Gorbsk deposit for the wine industry" have been developed. A permit from the Transcarpathian sanitary-epidemiological station has been obtained for the enological use of bentonites from the Gorbsk deposit.
