Influence of the variety is revealed on losses of garlic masses when drying. Natural losses of garlic in the variety Diushes were 15,7 %, that is 1,4 times less than in the variety Merefianskyi Biliyi. Irrespective of a variety, losses of garlic masses were 19,2%.
