Purpose of work - the purpose of this research is providing of effective government control of structure and dynamics of internal and external segments of agrifood products markets by an analysis and estimation of application the proper instruments, and also prognostication of their consequences. Research methods - economical and mathematical, mathematic modeling, extrapolation, economic statistics. Results of the researches - as a result of the conducted research the basic instruments of policy general description of the offered model of adjusting of agrifood markets developed. The design of sunflower and vegetable oil markets (taking into account the specific of their forming and by an export orientation) and sugar market (on the basis of internal production) is conducted.
