The object of investigation - fresh vegetables, including mangold (leaf beet), which is stored and realized for using fresh and industrial processing. The aim of standard elaboration is improving fresh vegetables quality, ensuring of products safety for life and health of people and environmental protection and also protection of consumers' rights. This can be reached by the way of careful preparing of vegetables for realization, purifying, assorting, calibrating and hacking of vegetables into different kinds of package and its marking. But everyone knows that package influences most of all on the vegetables competitive ability. Modern package has the following functions: protects vegetables; gives the information about producer and quality; satisfies principles of ecology; is the instrument of marketing; makes transportation easier. In the basis of the standard for technical conditions of mangold (leaf beet) the results of scientific investigation in the sphere of grooving technology, storing and processing of vegetables fresh are put down. The qualitative indices, established in the national standard, will promote the receiving of highly qualitative vegetable production and will serve as a basis for objective pricing while introducing new varieties. The elaborated standard is interconnected with normative documents in force as to the environmental protection, safety of work during assorting, packing, transportation, keeping as with document for commodity equipment, etc. The novelty of investigations lies in the elaborated standard for mangold (leaf beet). It is forseen the distribution of production into commodity sorts: the first and the second, the terms and methods of samples selecting are used according to the SST.U ISO 874-02, the requirements for safety and environmental protection are given, the requirement as to the storage are brought into correspondence with the demands of international standards and also they are attached to the modern demands of consumers and state system of standardization. The standard after coming into force, will be used in economies of Ukraine of different forms of property, which are engaged in producing, storing and realization of vegetable production.
