Object of investigations: Fresh vegetables, including rhubarb, fresh which is stored up and realized for using fresh and industrial processing. The aim of the standard working out is raising of quality of fresh vegetables, ensuring of production harmfulness for the life and health of a man and envison-mental protection and also protection of consumers' rights. It can be reached by careful preparing of vegetables for realization, purifying, sorting, calibrating and packing of them into different kinds of package and their marking. Everybody knows, that package influences vegetable competitiveness most of all. Modern package fulfils the following functions: it protects vegetables, carries information about producer and quality; satisfies the principles of ecology; is the instrument of marketing; makes transportation easier. In the basis of standard for technical Conditions of fresh rhubarb are put down the results of scientific researches in technology of growing, storing and processing of fresh vegetables. The indices of quality, established in the national standard, will promote getting of highly qualitative vegetable production and will serve as a basis for objective pricing while introducing new varieties. The worked out standard is inter-connected with existing normative documents about the environment protection, lab our safety during sorting, packing, transportation, storing as well as with the documents for commodity equipment, etc. The novelty of researches: In the standard, which has been worked out for rhubarb, fresh, the division of production is foreseen into two commodity sorts: the first and the second, the terms and methods of samples selecting are used according to SSU ISO 874-02, the demands on safety and environmental protection are given, the demands as to the storing are correlated with the demands of international standards, and also they are correlated with the modern demands of consumers and state system of standardization. The standard, after coming into force, will be used in economies of Ukraine of different forms of property, which are engaged in storing and realization of fresh vegetable production.
