The object of investigation - fresh vegetables, including parsnip fresh, which is stored up and realized for using fresh and industrial processing. The aim of the standard working out is increasing of fresh vegetables quality, ensuring of productions safety for man's life and health and environmental protection, and also consumers right protection. It can be reached with the way of careful preparing of vegetables for realization, purifying, sorting, calibrating and packing of vegetables in different kinds of package and their marking. Everybody knows that package influences the competitive ability of vegetables most of all. Modern package fulfils the following functions: it protects vegetables; carries information about producer and quality; satisfies the principles of ecology; is the instrument of marketing; makes transportation easier. In the basis of the standard for technical conditions the results of scientific investigations on the grooving technology, storing and processing of fresh vegetables are put down. The quality indices, installed in national standard, will promote receiving of highly qualitative vegetable production and will serve as a basis for objective pricing while introducing new varieties. The standard, that has been worked out, is connected with normative documents in force as to the environmental protection, work safety during, packing, transportation, storing and also with the document for commodity equipment, etc. The novelty of investigations: In the standard for parsnip fresh, which, has been worked out, the division of production into sorts is forseen: the first and the second, the terms and methods of sample selection are used according to SSTU ISO 8.74-02, the requirements of safety and environment protection are given, demands for storage are brought into conformity with the demands of international standards, and also they are brought into conformity with the present demands of consumers and the state system of standardization. The standard, after coming into force, will be used in economies of Ukraine of different forms of property, which are engaged in production, storing and realization of fresh vegetable production.
