The standards of soy-bean lecithin contain the greater amount of triglyceride, free fat acids and phosphatidyl ethanolamine. The increase of content of phosphatidyl choline at extraction with the use of 50%- solution of ethanol, isopropanol or at the use of column with aluminium oxide was proved by the method of HPLC. Determination of acute toxicity and skin-irritating action of lecithin (is low-hazard compound of the IV class of toxicity) was lead. The presence of antihypoxic and hypercholesterolemic action of sunflower lecithin in case of it's subacute application is set by determination of it's biological properties.
