Methods of the research - scientific method of abstraction specified the basic concepts, such as "efficiency" and "food industry", in the study of efficiency of activity of the food industry and in particular the baking industry; methods of analysis and synthesis (in the study of efficiency of activity according to certain methodology); economic andstatistical methods such as statistical observation, comparison, building a series of dynamics, absolute and relative deviation (in the analysis of certain factors in motion and development); graphical method (for a visual image of the obtained results); economic-mathematical method using software Microsoft Excel (when analyzing the influence of factors on the overall economic profitability of the enterprises of the baking industry); sociological method (the study of public opinion with regard to consumer preferences of buyers of Khmelnytsky region in purchasing bakeries) and others. The baking industry is a strategic industry of Ukraine. Considering the urgent need to prevent the spread of the crisis phenomena in the baking industry and social importance of the availability of bread for every citizen of Ukraine should be a clear economic mechanism of increase of efficiency of activity of the organizational management structure. Implementation of the developed economic mechanism of state authorities will gradually stabilize and improve the financial situation of the enterprises of baking industry, to gradually upgrade the production facilities, will ensure equal conditions for trade in the market of bread and the population with bread.
