The report contains the studied organizational and technological peculiarities of sugar production that have to be taken into account while defining the components of the accounting policy in the section of costs. The research was done for the company with limited liabilities "Novomyrhorodskyy Tsukor" which has an average size, produces sugar and provides services in processing of tolling raw materials. The study of methodological constituents of the accounting system enabled to state that the Order of the accounting policy of the company needs considerable revision particularly in the section of accounting of costs and the formation of the product cost.
