A complex system based on multiplex PCR has been established to determine the genotypes of wheat, barley and triticale with zero, low and high amylose content. The screening with DNA markers of domestic wheat varieties has been carried out for the presence of alleles of Wx, Glu-1, PPO, PSY genes of wheat, Wax gene of barley. The system of integrated assessment of barley varieties has been proposed on three important features: the thermal stability of beta-amylase (gene Bmy1), the activity of lipoxygenase-1 (gene Lox-1) and the accumulation of SE protein (gene Itr1), causing turbidity of beer during storage. The evaluation was conducted on food products sampling using the developed systems of DNA markers.
