The purpose of work is the development of the breeding-genetic methods to increase productivity, resistance, biological value of the beef for animals of genetic subtypes of Taurian Type Southern Meat breed with a different "interest" inheritance zebu. The research methods are: zootechnical, population genetic, zoochemical, physiological, statistical analysis of the results by the methods of variation statistics. The biological features of the growth and development of animals Southern Meat breed of cattle under intense heat load were investigated.
