Tabacum, interferon genes and desaturazy were taken from the collection of the Institute and reproduction. The plants were grown and propagated on nutrient agar medium 1/2 MC. It is optimized methods for determining sugar and fatty acids in plants and identified their contents. A study was conducted on the impact of cold stress fructan content in plants. It is noted that in the control non trannsform tobacco plants, the contents of PF grew cold stress after 7 mg / g to 15 mg / g. Shown that plants which have been transformed with the gene of interferon and subjected to cold stress observed increase of accumulation pension fund from 15 mg / g to 22 mg / g.
