Their physico-chemical and structural-adsorption characteristics are determined. The catalytic activity of new materials in the hydrolysis of fructose in an aqueous medium under hydrothermal conditions at 120 ° C has been tested. It was shown that the conversion of fructose under hydrothermal conditions on catalysts with grafted amino acids that contain groups exhibiting basic properties leads to a significant change in the yield of 5-HMF.
