The purpose of the work is to develop the theory and methods of managing the complex technological processes of food production in order to increase the efficiency of management taking into account energy and resource-efficient algorithms and to ensure the set of indicators of product quality. Research methods - computer simulation, synergistic control, compensation of perturbations and latency, coordination of the functioning of subsystems of technological complexes, estimation of uncertainties, processing of time series of technological variables, integration of methods of robust adaptive and optimal control. For the first time for technological objects the possibility of using self-organizing mechanisms for coordinated resonance control with the use of relatively small (thrifty) and topologically agreed resonance actions has been determined to stimulate and employ potentially rich own resources of automation objects due to their self-organization and regulation. During the scientific research work was successive used known and developed new methods for determining the properties of objects, were studied multidimensional controllers and control systems, and the identification of mathematical models. For technological complexes of sugar and alcoholic factories, bakery products production were investigated the processes of functioning on the basis of neural network structures using nonlinear dynamics methods and Data Mining technology with integration of control mechanisms within robust optimum and adaptive systems.
