This work reveals the current state, tendencies and background transformation of business system of Ukraine and their influence on the necessity to increase accounting and analytical support of the management processes. This work explores the functional content of the accounting and analytical information in strategic development of the restaurant business enterprises. A model of the accounting and analytical support of the management of strategic development on the basis of balanced system of indicators has been built in order to address the problems identified in the information support of making administrative decisions of a strategic nature. This model is adapted to the needs of the industry. Improvements have been made to the organisational and methodical approaches to the accumulation and analysis of information about non-financial performance in sales management. There is a method proposed to calculate costs which is based on application of modern methods of cost accounts. There has been improvement made to the methodical aspects of building information and analytical support in order to meet the challenges of increasing financial results of the roadside establishments of restaurant business enterprise due to network expansion. Furthermore a methodical approach is proposed in order to identify problematic aspects of existing accounting and analytical support for the calculation of key performance indicators.
