The conducted studies and trials have proved, that the developed test system makes it possible to identify and identify the presence of wheat, rye, barley and oats in the food raw material (cereals, flour) and in products that have been subjected to heat treatment, fermentation or hydro Lease (dry breakfasts, cookies, malt extracts). The level of sensitivity of the test system is sufficient to detect the so-called hidden gluten, which may be present as part of industrial production products in the form of thickening additives, formers, stabilizers, wheat flour, starch, and others.
