The dielectric, thermophysical and structural properties of samples of cellulose nanocrystals with different degrees of humidity have been studied. Using the method of contrast variation, a continuous transition from the diamond state of carbon inside the nanoparticles to its graphene state on the surface of nanoparticles was revealed.
