The research method is the analysis of periodicals of the present state of the use of nematic liquid crystals for the biological substances detection. The present state of the methods of biological substances detection by means of liquid crystal materials with spiral structure and the results of fundamental researches on the biological substances influence (proteins, fats, carbohydrates, etc.) on the cholesteric helical step behavior are analyzed.Spectral and physicochemical studies of the resulting mixtures will enable their use as sensitive elements of optical sensors of biological substances. Selection of functional materials on the basis of nematic and cholesteric liquid crystal materials was carried out to design the sensitive medium with a spiral structure with selective reflection is in the visible region of spectrum. The percentage ratio of the components of the mixture is determined.
