The analysis of mechanisms of interaction of liquid crystal substances with biological substances is carried out. In this work, the experimental investigations of the spectral characteristics of system ob the basis of a liquid crystal with bioobjects are carried out. It has been found that quercetin has a weak effect on the band of selective reflection of a liquid crystal matrix based on cholesterol esters, which slightly increases with increasing temperature. The optical density of the liquid crystal matrix increases linearly with increasing quercetin concentration. The use of cholesteric-nematic mixture based on nematic liquid crystal 5CB and cholesteric liquid crystal BLO-61 as a sensitive element of an optical sensor is proposed. The mechanism of interaction of nematic-cholesteric mixtures with cholesteric liquid crystal is revealed. The effect of the interaction of liquid crystalline materials with a spiral structure versus bioobjects concentrations is a change in the half-width of the band of selective reflection and its displacement.
