Stress conditions (metabolic, temperature, and oxidative stress) have been established, which significantly alter the viability parameters of the mutants for the genes of sod, sws, Dys and mutants w1118 and miR-34. Using a different eukaryotic test systems a wide range of chromosomal and genomic mutations was detected under the influence of Caramel flavor. Due to the action of flavor and vitamins A or C as chemopreventors there was a decrease in the appearance of mutations. The lowest mutagenic effect among the other flavors was shown by the samples of Whiskey and Vermouth, while the highest one showed Saussep and Scopex.
