It was shown that in all the studied breeds the capsaicinoids content was more than 4%, which satisfied to pharmacopoeial standards. Using the method of mass spectrometry, the structure of the investigated substances was identical to the standard samples of capsaicinoids. In the models of experimental inflammation, the anti-inflammatory activity of liquid extracts from the fruits of Capsicum annuum L. has been studied. It has been found that these extracts have a pronounced anti-inflammatory effect. In our view, this is due to the desensitization of vanilloid receptors of peripheral nerve fibers.
