The optical spectra (200-600 nm) at low electron energies (5-15 eV) are shown to contain both molecular bands and spectral lines of atoms and single-charged ions. All-round studies of elementary processes of interaction of low-energy electrons with complex molecules (ribose, fructose and xylitol) are carried out, processes of excitation of fructose and D-ribose vapour are investigated by optical spectroscopy. Energy dependences of full cross sections of scattering of electrons by molecules are determined. Energy loss spectra for electron scattering by fructose molecules are obtained by constant scattered electron residual energy method. Features observed in energy dependences of positive ion formation (full effective ionization cross section) for D-ribose, fructose and xylitol molecules (abrupt steepness changes or increase/decrease of the ionization efficiency rate), similarly to the case of chalcogens, provide evidence for the onset of new dissociation channels.
