The development of food production, changes in consumer models in different social groups, as well as foreign influences on the formation of both the food industry in particular and their effects on the gastronomic culture in general, which in total led to the transformation of food tastes and preferences, consumer practices were investigated. The substantive field of research was composed of phenomena and processes that are national in nature (in the past and present), as well as specific events and individual phenomena: traditional, evolutionary, ideological, cultural, political, which have manifested themselves over the last three centuries. Much attention was focused on understanding the impact of technical, technological, political, legal, economic, moral, educational factors on the transformation of food security in general and consumer practices in particular. A number of "white spots" of the research field of the problem were identified and filled in.
