The purpose of the study is the production and purification of serratiopeptidase, study of its biochemical and physicochemical properties, development of composite matrices for immobilization of the enzyme using biocompatible polymers of natural and synthetic origin, study of the interaction of serratiopeptidase/polymers. The study of protein-fractional composition of SDS-electrophoresis isolated from tablets of serratiopeptidase demonstrates the homogeneity of the enzyme with M.w. 45 ± 4 kDa. The study of the physicochemical characteristics of the peptidase showed that the thermo-optimum of free serratiopeptidase is 45 ?C and the pH optimum is 9.5. During the studies selected matrix PVA/sodium alginate, PVA/chitosan and Na-CMC ensure the preservation of the total proteolytic activity of the enzyme 88, 49 and 80%, respectively. A study of the rheological and spectrophotometric characteristics of serratiopeptidase and polymers showed a decrease in the characteristic viscosity and a change in the optical density of the media with the addition of serratiopeptidase, indicating the presence of polymer-enzyme interactions.
