The basic physicochemical characteristics of the synthesized nanoparticles were determined. The effect of synthesized metal nanoparticles’ influence on physiological and biochemical parameters of pathogenic and opportunistic bacterial cells has been investigated. Approaches for optimization of methods for control the content and number of common coliform bacteria and E. coli in biotechnological industries and environmental objects have been developed: the use of synthesized iron, silver and gold nanoparticles allows to accelerate the time of the recommended chromogenic reaction by 9 times. The features of contact interaction of synthesized nanoparticles with amino acids have been investigated. Approaches to the development of an optical sensor for determining the quality of foods by the content of biogenic amines are proposed.
