Purpose - to identify sources, to establish patterns of the inheritance of technological and confectionery parameters, to expand the genetic diversity, to create new varieties. The study was carried out in accordance with the requirements of ISO, State Standards of Ukraine, conventional methods of field and laboratory experiments, intraspecies and interspecies hybridization. Seven bread wheat varieties and 2 lines with a high content of carotenoids have been included in the NCPGRU’s core collection. An improved for breeding studies method for determining the content of carotenoid pigments in bread wheat grain and flour ensures an effective selection of valuable genotypes for healthy diets at different stages of the breeding process. Kharkiv varieties and lines were analyzed for the Pina-D1 and Pinb-D1 genes, and 9 of them were found to be soft with corresponding flour quality indicators. To create food wheat varieties, the total antioxidant activity (AOA) in winter wheat accessions with different grain color was determined, and a working collection was built up. Using protein markers, 3 winter bread wheat lines have been identified; they carry a new allele of the Gli-D1 gliadin locus – a marker of introgression of the genetic material from T. Spelta. Seven lines have wheat-rye translations in 1A and 1B chromosomes. One line has the Gli-D1 locus introgressed from Ae. tauschii. The practical significance lies in providing the breeding program with sources of high quality and information about them. Molecular marker-assisted and biochemical trait-oriented evaluation of grain quality ensured the reliable identification of accessions and their more efficient use in breeding. Nine new winter bread wheat varieties for different purposes have been created. Their introduction into production makes it possible to increase yields by 0.4-0.8 t/ha, which will meet the needs for high-quality food grain.
