Purpose of the work - to develop a method of natural polyphenols modification by acylation of phenolic hydroxyl groups with the mixed anhydrides of carboxylic acids, using the inverse phase transfer catalysis in a two-phase system water-organic solvent. The method meets the requirements of "green chemistry" and allows carrying out the reactions in an aqueous medium under mild conditions, as well as significantly reducing toxic and expensive organic solvents usage. The researches are aimed at obtaining new compounds with high radical scavenging activity based on natural polyphenols, studying their structure, physicochemical characteristics, and antioxidant properties. Research methods - IR spectroscopy, UV-Vis spectroscopy, nuclear magnetic resonance, reversed-phase high-performance liquid chromatography, quantum chemical calculations, general techniques of synthetic and preparative chemistry. The synthesis of mixed anhydrides of carboxylic acids by the IPTC method was investigated. The optimal synthesis conditions (catalyst, temperature, solvent) were determined. Catalytic acylation of flavonol (quercetin and rutin) hydroxyl groups was carried out with the anhydrides of carboxylic acids. The influence of the temperature, catalyst nature, and solvent on the course of this reaction was established. It was shown that the IPTC method allows carrying out the acylation reaction under mild conditions. The reaction products were characterized by high-performance liquid chromatography. The radical scavenging activity of the modified polyphenols in the reaction with a stable DPPH radical was investigated. The stoichiometry of gossypol and its derivatives complexes with ions of iron (II) was established. The intramolecular hydrogen bonds for several gossypol imine derivatives were investigated using quantum chemistry and PMR spectroscopy. Product Description popup.authors Efimova Irina V.
