Description

 The analysis of scientific and technical literature and the state of the issue in the dairy industry to determine the chemical composition of dairy products by groups and types. The sequence of stages for determining the nutritional and energy value of dairy products is determined. The analysis of current normative documents on determination of chemical composition of different types of milk, sour-milk products, canned condensed milk and milk powder products, cheeses, butter, spreads is carried out. The received information is generalized and the comparative analysis of accuracy of methods of definition of chemical composition of various types of dairy products is carried out. Methodical recommendations for determining the nutritional value of dairy products have been developed.
