The main trends in the functioning of the industry, the state of reproduction of orchards and berries, problems and prospects for the use of innovations are studied. The directions of increase of efficiency of gardening in the conditions of the competitive environment are substantiated. The organizational and economic aspects of creation and functioning of horticultural innovation-oriented enterprises are highlighted and scientific approaches to the development of such production and economic structures are substantiated. On the basis of research of organizational and economic features of innovative development the economic and mathematical model of optimization of production and realization of production of grain crops (apples) in the gardening enterprise is proved. The current supply and demand, the level of production and consumption of nuts are determined, the prospects of development of the nuts industry in Ukraine for the period up to 2035, labor costs and funds for the creation of industrial plantations, investment and expected efficiency of measures.
