The system of classification criteria and on their basis classifiers for objects of organic production, their quality indicators and methods of their definition is offered. The scheme of conformity assessment of organic farms at the national level is offered. Experimental studies of ecological and toxicological indicators of organic juices have been carried out, as a result of which the corresponding values of their ecologically permissible concentration have been established. In order to improve the technical component of the control system, a method of administrative mapping of lands intended for organic production is proposed. Mathematical dependences of physicochemical and electrical properties of different types of soils have been developed. Requirements for creation of electrochemical devices for operative monitoring of organic lands are formulated. The method of establishing the suitability of lands for organic certification is proposed both for individual indicators and for complex ones. The basic principles of creating a system for collecting information of the cyberphysical system of control over the production of organic grain products have been developed.
