It is established that grape varieties Odessa Pearl, Agate Tairovsky, Charivny, Otrada are characterized by low values of technological stock of phenolic, colour substances and enzyme activity MFMO. Varieties are recommended for use for a table varietal wine materials production. It is determined that the use of autochthonous strains of wine yeast has a positive effect on physical,chemical and organoleptic characteristics of wine materials from grape varieties and selections of new breeding, in particular, on the content and ratio of organic acids, aromatic compounds and sensory profiles of wines.
