The purpose of the work is to increase the efficiency of technological processes of processing and storage of agricultural products and processes and equipment of food production. Research methods - theoretical and experimental methods, laboratory tests, hypothesis testing and processing of experimental data are performed according to standard programs. Experimental studies were conducted in the laboratories of TSATU in accordance with accepted methods and industry standards. This report offers: - substantiation of parameters of pulse homogenizer of milk; - substantiation of parameters of jet-slit homogenizer of milk with separate giving of cream; - optimization of parameters of jet mixing of drinks; - substantiation of parameters and modes of vacuum cooling of cherry fruits and their short-term storage; - substantiation of parameters of the film heat exchanger for fast cooling; - storage of agricultural products and berries using new approaches; - substantiation of technological parameters of accelerated germination of grain in a cylindrical drum with air ionization. As a result of work. A physico-mathematical model of the process of dispersing the fat phase of milk during pulse homogenization has been developed. A laboratory sample of a jet-slit homogenizer of milk has been developed. The influence of the distance between the nozzles on the performance and quality of mixing in the countercurrent-jet mixer is determined. The optimal parameters and modes of operation of the vacuum cooler during pre-processing of cherry fruits are determined in production conditions. A method of preparing beverages for sale using a film evaporator is proposed. A method of grain germination has been developed. Scope: processing of agriculture and food industry.
