In accordance with this goal, the role and importance of niche crops in today's conditions are revealed, the current state of their production in Ukraine and in the regions, the economic efficiency of production of these crops, the main trends of their export-import. Two optimization models have been built, the application of which will give agricultural enterprises the opportunity to optimize the structure of crops with available resources in accordance with the principles of diversification. In particular, one of the models which will provide a number of effects for manufacturers, the main of which will be to increase profitability and increase payback. In the process of work the information of the State Statistics Service of Ukraine and the Ministry of Agrarian Policy was used. The methodological and theoretical basis of the work are the scientific provisions of applied research in the field of national and agricultural economics, scientific publications in periodicals and online publications.
