For both types of composites, the mechanisms of binding water to the surface and methods of transferring hydrophobic materials into the aqueous environment were investigated. The state of interphase water in air, organic and acidic environments was studied. It was established that the presence of a hydrophobic component in composites stabilizes surface water in a weakly associated state, when a significant part of water molecules does not form hydrogen bonds. A liquid hydrophobic medium enhances this effect, and a strong acid (trifluoroacetic acid) added to it promotes the transition of water into a strongly associated state. It is shown that the redistribution of water in the interparticle gaps of AM1 with protein molecules immobilized on their surface changes under the influence of mechanical loads. Mechanically activated samples are characterized by the possibility of water penetration into the gaps between the primary particles of methyl silica. For the AM1/gelatin composite, a significant adsorption activity in the aqueous medium in relation to molecules of average molecular weight was found.
