The purpose of the work is the scientific substantiation and development of safety rules in the production of oils by pressing and extraction. To achieve this goal of the work, existing technologies and the current state of compliance with the requirements for oil production by pressing and extraction at oil and fat industry enterprises were investigated. Basic safety requirements have been established for the production of oils by pressing and extraction. Based on the data obtained, a draft safety rules for the production of oils by pressing and extraction have been developed. The developed safety rules will ensure the creation of conditions for reducing the risk of injury at enterprises, significantly reducing human and material costs, increasing the competitiveness of domestic industrial products and, as a result, increasing the volume of their exports and gradually strengthening the economic potential of the state, increasing the level of social protection of citizens.
