The purpose of the work is to develop and implement a resource-saving method for the production of multicomponent pasty semi-finished products of high readiness based on local plant raw materials, which ensures the competitiveness of the agro-industrial sector in the conditions of war and post-war reconstruction. The subject of the research is resource-saving technologies and hardware designs for the production of multicomponent pasty semi-finished products from local plant raw materials. The work develops a resource-saving method for the production of multicomponent pasty semi-finished products of high readiness from local raw materials of the Kharkiv region, such as apples, Jerusalem artichoke, cranberries, beets and hawthorn. Unified designs of low-temperature devices are proposed, which provide minimal energy and metal consumption, effective use of secondary energy, and reduction in processing time. The developed equipment and technological line allows the production of functional semi-finished products on farms, contributing to the modernization of the agro-industrial sector and improving the quality of food products.
