The purpose of the work is to identify patterns in the formation of grain quality indicators of varieties and breeding lines of winter bread wheat depending on abiotic and anthropogenic factors in the conditions of the central part of the Forest-Steppe of Ukraine. Research methods are field, laboratory, statistical. Results. It was established that with the shift of the sowing date from I to III, the 1000 kernel weight decreased, but other quality indicators did not change significantly. Significantly lower quality indicators were found after sunflower. Sources of winter bread wheat there were identified, namely, Erythrospermum 60667, Erythrospermum 60724 by physical indicators of grain quality; MIP Palianytsia myronivska and MIP Stefaniia by flour quality indicators; MIP Aurika, MIP Stefaniia, Erythrospermum 60667, Lutescens 60400, and Lutescens 60702 by rheological properties of dough. Grain quality indicators determined by genotype (alveogram configuration ratio, dough tenacity, grain damage by wheat bug, sedimentation value, water absorption ability of flour, test weight) were identified, and database of the part of influence of various factors on the formation of quality indicators was created.
