The work was aimed to identifying features of the influence of different rates of nitrogen fertilizers on formation of grain quality indicators of winter bread wheat in environment of the central part of Ukrainian Forest-Steppe. Research methods: field, laboratory, statistical. Results. To increase protein and gluten content, the varieties MIP Aelita and MIP Vidznaka should be fertilized with ammonium nitrate (75 kg/ha a.s.), while the variety MIP Fortuna with UAN-32 (50 kg/ha a.s). No significant effect of fertilizer rates on sedimentation index was found. The variety MIP Vidznaka was characterized with the highest grain quality indicators. The part of sum squares for genotype influence on sedimentation index was determining, while for protein and gluten content it was significant. The conditions of the growing season had the most influence on protein and gluten content. A reliable effect of nitrogen fertilizers and interaction genotype × nitrogen fertilizers on all quality traits was obtained. Genotype was the key factor in formation of grain quality indicators. Database of the parts of influence of factors on the formation of gluten complex quality indicators was created.
