It was established that the inclusion of flaxseed oil (as a source of α-linolenic acid), sunflower oil (as a source of linoleic acid), the synthetic compound doxan (as an inhibitor of PUFA biohydrogenation processes in the rumen), and sodium selenite (as a source of selenium) in the diets of fattening bulls caused a significant increase in the content of biologically active polyunsaturated fatty acids of the ω-3 and ω-6 families and selenium in the liver and skeletal muscles, as well as an increase in average daily body weight gains. Thus, a clear relationship was observed between the dietary content of α-linolenic and linoleic acids and selenium and their levels in the tissues of experimental animals, productive traits, and the biological (nutraceutical) value of beef. It was also found that the best results were obtained with the additional supplementation of 2.64 mg of sodium selenite (1.2 mg of selenium) and flaxseed and sunflower oils at amounts of 65 and 35 mL per head per day, respectively. Feeding this diet led to an intensification of average daily body weight gains of fattening bulls by 93.4–98.3 g (8.9–9.3%), an increase in the content of essential polyunsaturated fatty acids of the ω-3 and ω-6 families in the liver by 0.14 and 0.10 g/100 g of raw mass, respectively (77.8–82.4% and 17.5–19.9%), and in skeletal muscles by 0.09–0.11 and 0.07–0.08 g/100 g of raw mass, respectively (90.0–100.0% and 23.3–25.8%). The selenium content increased by 0.19–0.22 and 0.04–0.06 mg/kg, respectively (44.2–47.8% and 22.2–31.6%). As a result, the biological (nutraceutical) value of beef was enhanced.
