The peculiarities of the formation of demand for food with low purchasing power of the population in the post-war period were studied. The level of self-sufficiency of the country in food products was determined and the saturation of the market with essential products was assessed. Priority areas for the formation of value-added chains are substantiated based not only on the optimization of channels and markets for the sale of grown products, but primarily on ensuring the processing of raw materials of own production, which will contribute to increasing the economic efficiency of agricultural market participants and the growth of industry GDP. In the implementation of the research, the following results were obtained: proposals for expanding the capacity of the agricultural market in the post-war period, taking into account the low solvent demand of the population and the existing inflationary and devaluation processes in the country; proposals for the price situation in the markets of agricultural products and their processing products in the context of solving the problem of food security in Ukraine; recommendations for adapting and further optimizing the infrastructure of the agricultural market.
