The question of design of process of freezing of food products is considered by a contact method on condition of two fronts of phase transformation. A formula for determination of duration of process of freezing is got. The design of process of cooling of vegetable raw material is considered with the purpose of determination of coefficient of temperaturoprovodnosti and further his use at the design. It is set, that the existent mathematical model of process of cooling well enough recreates motion of kinetics of temperature of standard in his center. New methods of heat-exchange computations of technological processes of food productions are presented. In particular predlogenna hydrodynamic model of convection motion of intermediate teplonositelya in the warming shirt of universal garochnogo vehicle with the intermediate heating by kremniyorganicheskim teplonositelem. The model of heating engineering indexes of universal garochnogo vehicle with the intermediate heating is got. The results of experimental researches of determination of heat-exchange processes of universal garochnogo vehicle with the indirect heating are got by kremniyorganicheskim teplonositelem, and offered to calculate criterion equalizations allowing coefficients of heat emission.
