При виконанні кваліфікаційної роботи було здійснено маркетингові дослідження конкурентного середовища закладів ресторанного господарства, що проектується, надано техніко-економічне обґрунтування проекту та підтверджено доцільність будівництва закладу швидкого обслуговування на 80 місць у м. Дніпро. Проведено обґрунтування проекту підприємства. Проведено орга-нізаційно-технологічні розрахунки, що включають: розробку виробничої програми; розрахунок механічного, холодильного та теплового обладнання; розрахунок площі основних та допоміжних приміщень; запропоновано компонувальне рішення. Розроблено заходи щодо охорони навколишнього середовища, санітарії, охорони праці та протипо¬жежної безпеки на підприємстві. Розраховано основні економічні показники господарської діяльності закладу швидкого обслуговування у м. Дніпро. The qualification work is dedicated to the development of the project of a quick service establishment for 80 seats in the food court zone of the shopping and entertainment complex in the city of Dnipro. During the performance of the qualification work, marketing studies of the competitive environment of the planned restaurant industry were carried out, the technical and economic justification of the project was provided and the feasibility of the construction of a quick service establishment for 80 seats in the city of Dnipro was confirmed. The substantiation of the project of the enterprise was carried out. Organizational and technological calculations were carried out, including: development of a production program; calculation of mechanical, refrigeration and heating equipment; calculation of the area of main and auxiliary premises; a compositional solution is proposed. Measures have been developed for environmental protection, sanitation, labor protection and fire safety at the enterprise.
