В ході виконання проекту для обробки яловичих черев запропоновано використання механізованої лінії ФОК-К. Обрано і обґрунтовано асортимент продукції, надані відповідні технологічні схеми, здійснено розрахунок сировини, готової продукції, допоміжних матеріалів та тари, розраховано та обрано технологічне обладнання, визначено технологічно-організаційні аспекти роботи лінії, а також заходи з контролю якості та безпечності фабрикатів кишок. Виконано необхідні креслення. На підставі результатів аналізу практичних аспектів виробництва і застосування кишкових оболонок встановлено, що ринок натуральних оболонок поступово структурується. Найбільшими імпортерами кишсировини в Україну є Китай, Німеччина, Бразилія, Польща, Туреччина, Іран, Азербайджан. Зростання кількості м’ясопереробних підприємств і споживчого попиту на продукцію в натуральній ковбасній оболонці спричиняє потребу в дорогій високоякісній кишковій сировині, імпорт якої буде зростати й надалі. Перспектива розвитку українського ринку високоякісних, конкурентноздатних ковбасних виробів залишається за вітчизняним виробником і сировиною. Аналіз технологічних аспектів обробки кишок показує, що всі операції обробки кишок спрямовані на формування якості кишкових оболонок та підвищення їх стійкості під час зберігання. Надано узагальнення дефектів кишок та заходів з їх усунення. Результати досліджень пройшли апробацію з участю автора в умовах освітнього процесу. Опубліковано тези доповіді на всеукраїнській науково-практичній конференції здобувачів вищої освіти і молодих учених. Qualifying work of bachelor is sanctified to development of project of technological line from treatment of guts of cattle by power 300 complete sets for a change and to the analysis of practical aspects of production and application of intestinal sausage casings. During implementation of project for treatment of beef bellies the use of the mechanized line of ФОК-К is offered. The assortment of products is select and reasonable, corresponding flowsheets are given, the calculation of raw material, prepared products, auxiliary materials and container is carried out, a technological equipment is expected and select, the technologically-organizational aspects of work of line, and also measures, are certain on control of quality and unconcern of fabricates of bowels. Necessary drafts are executed. It is set on the basis of results of analysis of practical aspects of production and application of intestinal sausage casings, that the market of natural sausage casings is a structured gradually. The most importers of intestinal raw to Ukraine are China, Germany, Brazil, Poland, Turkey, Iran, Azerbaijan. The increase of amount of meatprocessing enterprises and consumer demand on products in a natural sausage casings causes a requirement in expensive high-quality intestinal raw material, the import of that will grow in future. The prospect of the Ukrainian market of high-quality, competitive sausage products development remains after a home producer and raw material. The analysis of technological aspects of treatment of guts shows that all operations of treatment of guts directed to forming quality of intestinal sausage casings and increase of their firmness sent to forming during storage. Generalization of defects of guts and measures is given on their removal. The results of researches passed approbation with participation of author in the conditions of educational process.
