Задля стабільності структури ньокків під час циклу «заморожування–варіння», було використано крохмаль хімічної модифікації, ацетильований, що здатний витримувати низькі температури. Таким чином, технологія ньокків заморожених є актуальною та затребуваною, і тут також необхідно врахувати умови заморожування, тривалість заморожування та технологічні властивості основної та додаткової сировини, яка здатна витримати технологічні фактори The qualification work is devoted to the development of frozen gnocchi technology using milk proteins "Mlekovita". The introduction of milk proteins into the composition of gnocchi will allow to form a softer, more elastic consistency, which confirms the moisture-retaining property of milk proteins, and the introduction of milk proteins will also help to improve the nutritional and biological value of gnocchi. For the stability of the gnocchi structure during the "freezing-cooking" cycle, chemically modified starch, acetylated, was used, which is able to withstand low temperatures.
