В ході виконання проекту для обробки яловичих, баранячих та свинячих черев запропоновано використання механізованої лінії ФОК-К, ФОК-С і ФОК-Б. Обрано і обґрунтовано асортимент продукції, надані відповідні технологічні схеми, здійснено розрахунок сировини, готової продукції, допоміжних матеріалів та тари, розраховано та обрано технологічне обладнання, визначено технологічно-організаційні аспекти роботи лінії, а також заходи з контролю якості та безпечності фабрикатів кишок. Виконано необхідні креслення. Надано аналіз наукових та практичних аспектів виготовлення і використання у харчовій промисловості колагенових плівок. На підставі узагальнення технічних рішень з отримання та формування функціонально-технологічних властивостей і безпечності колагенових плівок, досвіду роботи харчових підприємств і рекомендацій вітчизняних та закордонних фірм з виготовлення колагенових плівок, висвітлено особливості технологічного процесу, які забезпечують одержання продукції високої якості, а також можливість реалізації високоефективного механізованого технологічного процесу виготовлення колагенових плівок. Результати дослідження пройшли апробацію з участю автора в умовах освітнього процесу на кафедрі технології м’яса факультету переробних і харчових виробництв Державного біотехнологічного університету. Опубліковано тези доповідей на V Всеукраїнській студентській науковій конференції «Формування сучасної науки: методика та практика і на XX Міжнародному форумі молоді «Молодь і індустрія 4.0 в XXI сторіччі». The bachelor's thesis is devoted to the development of a project of technological lines for processing beef, lamb and pig intestines of a meat processing plant with a capacity of 110 tonnes of meat per shift and analysis of technologies for the manufacture and use of collagen films in the food industry. In the course of the project, it was proposed to use the mechanised FOK-K, FOK-S and FOK-B lines for processing beef, lamb and pig intestines. The range of products was selected and justified, the relevant technological schemes were provided, the calculation of raw materials, finished products, auxiliary materials and containers was carried out, the technological equipment was calculated and selected, the technological and organisational aspects of the line operation were determined, as well as measures to control the quality and safety of intestinal preparations. The necessary drawings were made. An analysis of scientific and practical aspects of the manufacture and use of collagen films in the food industry is provided. Based on the generalisation of technical solutions for the production and formation of functional and technological properties and safety of collagen films, the experience of food enterprises and recommendations of domestic and foreign companies for the production of collagen films, the features of the technological process that ensure the production of high quality products, as well as the possibility of implementing a highly efficient mechanised technological process for the production of collagen films, are highlighted. The results of the study were tested with the participation of the author in the educational process at the Department of Meat Technology of the Faculty of Processing and Food Production of the State Biotechnological University.
