Застосування напівфабрикатів високого ступеня готовності, зокрема у вигляді сухих сумішей для десертної продукції, дозволить максимально раціоналізувати технологічний процес виробництва вищевказаної групи продукції, збільшити обсяг та ефективність її виробництва та розширити асортимент. Розроблено рекомендації з підбору обладнання для забезпечення роботи спеціалізованого цеху з виробництва сухих сумішей. Визначено алгоритм забезпечення безпеки функціонування технології виробництва жельованої десертної продукції з використанням сухих сумішей на етапі виробництва сухих сумішей на прикладі спеццеху, який випускає ці напівфабрикати. The qualification work is devoted to the development of products based on modified raw materials (gelatin) with certain functional and technological properties, as well as semi-finished products in the form of dry mixes for the production of jelly dessert products. The use of semi-finished products of a high degree of readiness, in particular in the form of dry mixes for dessert products, will allow to maximally rationalize the technological process of production of the above-mentioned group of products, increase the volume and efficiency of its production and expand the assortment. Recommendations have been developed for the selection of equipment to ensure the operation of a specialized workshop for the production of dry mixes. An algorithm has been determined to ensure the safety of the technology for the production of jelly dessert products using dry mixes at the stage of production of dry mixes using the example of a special workshop that produces these semi-finished products. popup.nrat_date 2025-11-21 Close
