Це пов’язано з тим, що хліб є щоденним продуктом харчування і входить до харчових раціонів людей будь-якого віку та статі. У цьому зв’язку важливою є харчова цінність хліба, яка, як підтверджує аналіз літератури, потребує корегування у бік збільшення кількості біологічно активних речовин, дефіцитних амінокислот тощо. Серед шляхів підвищення харчової цінності хліба перспективним є застосування нетрадиційних зернових культур, серед яких має традиції вирощування в Україні прадавня пшениця спельта (Triticum Spelta). Особливо цінними є підходи, що дозволяють максимально використати природний потенціал зерна, а саме, застосування його у цілому вигляді. The baking industry is considered a strategic sector of the industry, the condition of which significantly ensures Ukraine's food security. This is because bread is a daily food product included in the diets of people of all ages and genders. In this regard, the nutritional value of bread is important, which, as literature analysis confirms, needs to be adjusted to increase the amount of biologically active substances, essential amino acids, and so on. Among the ways to enhance the nutritional value of bread, the use of unconventional grain crops is promising. Among these is the ancient wheat spelt (Triticum spelta), which has a tradition of cultivation in Ukraine.
